Seven gran reserva cavas, handcrafted in the Celler Jaume micro-winery and the result of experimentation, bring to life this exclusive line from the Ars Collecta collection

Codorníu, The oldest winery in Spain presents its new collection of seven unique Gran Reserva cavas. This project was born after the Cavas de Paraje project was consolidated. Its production is carried out using artisanal methods from small batches intended for learning in the Celler Jaume micro-winery, opened in 2013 and located on the site where the first Codorníu cavas were produced. This is a space where small-scale experimentation takes place, and the results are subsequently applied to the rest of the company's cavas.

The collection is made up of seven limited-edition rarities that are a tribute to the art of experimentation. Each bottle reflects the creativity and continuous learning of the winery's two winemakers, Bruno Colomer and Laura Tragant, which explore new ways of interpreting the vineyard and time. 

Codorníu Ars Collecta Cavas Singulares Ancestro It symbolizes a return to the origins of the first sparkling wines, with minimal intervention throughout the entire production process. Originating from an estate in the Garraf Natural Park, this Xarel·lo wine is from the 2021 vintage and aged for a minimum of 28 months. Its pale yellow color is tinged with very soft golden reflections. With fine, well-integrated bubbles, the nose reveals notes of Mediterranean plants: dried fennel, garrigue, thyme, and bay leaf, combined with light citrus notes, similar to lemongrass. 

This lively and elegant cava with a broad aroma is full-bodied, silky, and has extraordinary acidity on the palate. Its freshness and liveliness make it highly gastronomic, and its smoothness makes it very versatile: it complements all types of fish and also synergistically with lightly seasoned red or white-meat poultry. 3,279 bottles have been produced.

Codorníu Ars Collecta Cavas Singulares Ancestro | 15 Wineries

Codorníu Ars Collecta Cavas Singulares Aires del Sur, from the 2018 vintage, aged for a minimum of seven years, is a true tribute to the Xarel·lo from the Garraf Natural Park region, fermented in barrels that had previously held fino and brandy. Pale golden yellow in color, its extremely fine bubbles form continuous strings and a persistent crown that indicates slow fermentation in the bottle.

With aromas of apple, balsamic, and roasted notes (very mild licorice), autumn fruits also emerge, such as raw quince, pecan, chestnut, raw nuts, and syrup. With well-integrated acidity and a broad, bitter undertone, this cava is well-suited to falconry main courses, fish pil-pil, warm salads, and mushroom dishes. Only 743 bottles have been produced.

Codorníu Ars Collecta Cavas Singulares Aires del Sur | 15 Wineries


Codorníu Ars Collecta Cavas Singulares La Plana It enhances the 2019 vintage of Parellada from a vineyard located 500 meters above sea level in Pla de Manlleu, in the Baix Penedès region, and demonstrates that this varietal can age well. It has a pale yellow color with soft greenish reflections, very fine bubbles forming continuous strings, and a persistent crown.

On the nose, notes of honey, white flowers (honeysuckle), and wild plants emerge. The result is a very fresh, aromatic, and gastronomic cava thanks to its delicate profile. It pairs well with warm salads, lightly seasoned white meats, seafood or fish rice dishes, and white meats with mild sauces. It is aged on its lees for a minimum of 60 months, and a total of 1,438 bottles have been produced.

Codorníu Ars Collecta Cavas Singulares Mediterráneo It pays homage to the Xarel·lo variety, a true Penedès variety, where it thrives, and which also demonstrates that it's possible to maintain freshness after a long aging period. Pale yellow with soft greenish reflections and very fine bubbles, it exudes citrus notes (verbena) mixed with dried Mediterranean herbs (thyme, lemon verbena, and balm) and reineta apple. 

This is a cava with great freshness and liveliness, aromatic breadth, well-integrated acidity, and great aging potential. It has a smoothness on the palate that makes it very versatile: it pairs well with all kinds of white fish, seafood rice dishes, and seasoned or grilled white meats. The 2018 vintage is aged on its lees for a minimum of 70 months. 1,446 bottles have been produced.

Codorníu Ars Collecta Cavas Mediterráneo | 15 Wineries


Codorníu Ars Collecta Cavas Singulares Rosé Gran Reserva, from the 2014 vintage and from Pla de Manlleu (Baix Penedès), is aged on its lees for a minimum of 9 years, a clear demonstration that Pinot Noir also stands the test of time. Dark gold in color with soft pinkish reflections, very fine bubbles, and a persistent crown, the nose is complex, with notes of candied and liqueur cherries, caramel, sloe gin, caramelized apple, brioche with candied fruit, and tobacco leaves. 

Its well-integrated acidity, fullness on the palate, and sweet profile make it a highly recommended cava for sweet desserts. It also pairs perfectly with meats and fruit-based sauces (apple puree, white meats accompanied by caramelized onions, duck breast with berry sauce, etc.). Production is limited to 2,024 bottles.

Codorníu Ars Collecta Cavas Singulares Rosé Gran Reserva| 15 Wineries


Codorníu Ars Collecta Cavas Singulares Serralada Pays tribute to the Macabeo variety, a rare variety in single-varietal cavas. Pale yellow with soft greenish reflections and very fine bubbles, it contains notes of stone fruit (apricot, vine peach, and medlar).

With well-integrated acidity, full-bodied and dry, this bold cava from the 2018 vintage demonstrates that this variety is capable of producing great cavas with long aging. In fact, it is aged for a minimum of six years from the harvest. In this case, it expresses the fullness of ripe fruit. It complements fruit salads, meats cooked with mild sauces, salt-baked pork loin, and rice dishes with white meats. Only 740 bottles were produced.

Codorníu Ars Collecta Singular Cavas Three Zones It highlights the three main vineyard areas from which the winery sources its finest grapes. In turn, each of the three varieties that make up this cava comes from a single estate: the Chardonnay from the Segrià region of Lleida; the Pinot Noir from Conca de Barberà; and the Xarel·lo from the Garraf Natural Park. Pale yellow with soft golden reflections, its bubbles are very fine, forming continuous strings and a persistent crown. On the nose, notes of autumnal fruit (quince) emerge, interspersed with hints of Mediterranean field herbs, such as thyme and honeysuckle.

This cava, with its great freshness, elegance, and aromatic breadth, boasts well-integrated acidity, a voluptuous palate, and persistence, making it a versatile pairing with all types of fish and poultry with red or white meat. From the 2018 vintage, it is aged on its lees for a minimum of 70 months. 5,103 bottles were produced.
